Description

This Whipped Feta Dip with Honey and Blistered Tomatoes is a delicious and creamy appetizer that combines the tangy flavors of feta cheese with the sweetness of honey and the burst of flavor from roasted cherry tomatoes.

For the Blistered Tomatoes:

  • 2 1/2 cups cherry tomatoes
  • 5 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp salt
  • 1 tsp pepper
  • pinch of cumin
  • 2 sprigs fresh thyme

For the Whipped Feta:

  • 8 oz light cream cheese (full-fat cream cheese works too)
  • 200 grams light feta
  • 1/4 cup water
  • 2 1/2 tbsp honey
  • 1 tsp pepper
  • 1/2 tsp salt
  • 1/2 lemon, zested

Instructions

  1. Preheat your oven: Preheat the oven to 450°F (230°C).
  2. Prepare the tomatoes: In an oven-safe dish, combine cherry tomatoes, garlic, olive oil, honey, salt, pepper, cumin, and thyme. Roast for 20 minutes until blistered.
  3. Make the whipped feta: In a food processor, blend cream cheese, feta, water, honey, pepper, salt, and lemon zest until smooth.
  4. Assemble: Spread the whipped feta on a plate, top with blistered tomatoes and juices. Serve with crostini or crackers.

Notes

  • You can customize the dip with additional herbs like fresh basil or oregano.
  • Adjust the sweetness by adding more or less honey to suit your taste.
