For the Watermelon Sorbet:
- 4 cups seedless watermelon, chopped
- 1 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lime juice
Instructions
- Prepare the Watermelon: Quarter a watermelon, remove the rind, and chop into squares.
- Make the Simple Syrup: In a saucepan, combine sugar, water, and lime juice. Heat until sugar dissolves, about 2 minutes.
- Blend: In a blender, mix watermelon and simple syrup until smooth. Do not strain out pulp.
- Chill: Transfer the puree to a bowl and refrigerate for about 3 hours.
- Churn: Process in an ice cream maker for up to 20 minutes or until slushy.
- Freeze: Transfer to a loaf pan, cover, and freeze overnight to firm up.
- Serve: Scoop and enjoy! If too firm, let it sit out briefly to soften.
