For the Watermelon Sorbet:

  • 4 cups seedless watermelon, chopped
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1 tablespoon lime juice

Instructions

  1. Prepare the Watermelon: Quarter a watermelon, remove the rind, and chop into squares.
  2. Make the Simple Syrup: In a saucepan, combine sugar, water, and lime juice. Heat until sugar dissolves, about 2 minutes.
  3. Blend: In a blender, mix watermelon and simple syrup until smooth. Do not strain out pulp.
  4. Chill: Transfer the puree to a bowl and refrigerate for about 3 hours.
  5. Churn: Process in an ice cream maker for up to 20 minutes or until slushy.
  6. Freeze: Transfer to a loaf pan, cover, and freeze overnight to firm up.
  7. Serve: Scoop and enjoy! If too firm, let it sit out briefly to soften.
