For The Pasta
- 8 ounces pasta (farfalle or any shape)
- Kosher salt
For The Meat Sauce
- 1 lb ground beef (93%)
- 1 medium onion, chopped
- 1 tbsp red pepper paste or tomato paste
- 1 tsp onion powder
- 1 tsp ground cumin
- 2 tsp sweet paprika
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
For The Garlic Yogurt Sauce
- 1 cup Greek yogurt (plain, full fat or skim)
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp kosher salt
For The Butter Sauce
- 4 tbsp unsalted butter
- 1 tsp sweet paprika
- 1/4 tsp red pepper flakes (or more to taste)
- 1/2 tsp kosher salt
As Garnish (optional)
- 1/2 cup cherry tomatoes, halved
- 4 tbsp dried mint or fresh parsley
- 2 tbsp sumac (optional)
Instructions
- Cook the Pasta: Boil salted water, cook pasta until al dente, about 9-10 minutes. Reserve ½ cup cooking liquid, drain, and set aside.
- Make the Meat Sauce: Brown ground beef in a skillet, add onion, spices, and paste. Cook until meat is fully done and set aside.
- Prepare Yogurt Sauce: Mix yogurt, garlic, lemon juice, and salt. Adjust seasoning and set aside.
- Make Butter Sauce: Melt butter, add paprika, red pepper flakes, and salt. Stir until bubbly.
- Assemble: Combine pasta, yogurt sauce, meat, and butter sauce. Repeat for each serving. Garnish as desired and serve.
Notes
- Yields: 4 servings
- Reserved liquid: Save pasta water in case needed.
- No olive oil for sautéing meat: Meat releases its own oils.
- Storage & Reheating: Store components separately and assemble when ready.
