Ingredients

Units Scale

Meatball Ingredients

  • 2 pounds ground chicken
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup finely diced red onion
  • 4 cloves garlic, finely minced
  • 1/2 teaspoon lemon zest

For Serving

  • Chopped romaine lettuce
  • Feta cheese, crumbled
  • Cucumber, sliced
  • Tomato, diced
  • White rice, cooked
  • Tzatziki sauce

Instructions

  1. Mix Ingredients: Add the ground chicken, salt, black pepper, cumin, oregano, red pepper flakes, dill, mint, red onion, garlic, and lemon zest into a small mixing bowl. Use your hands to thoroughly mix until all ingredients are evenly combined.
  2. Form Meatballs: Use a cookie dough scoop or tablespoon to portion out the mixture, then roll with your hands to form meatballs about 1 to 1.5 inches in diameter.
  3. Cook Meatballs: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once hot, add the meatballs in batches, cooking for approximately 3-4 minutes per side until browned and cooked through, with an internal temperature of 165°F. Adjust cooking time based on batch size.
  4. Serve: Place the cooked meatballs over chopped romaine lettuce. Top with crumbled feta, sliced cucumber, diced tomato, cooked white rice, and a dollop of tzatziki sauce. Serve immediately.

Notes

  • For extra flavor, add a squeeze of lemon juice over the meatballs before serving.
  • You can bake the meatballs at 400°F for 20 minutes if preferred over skillet frying.
  • Ensure the internal temperature reaches 165°F for safety.
  • Use fresh herbs for the best flavor, but dried can be used if fresh is unavailable, adjusting quantities accordingly.
