Description

This Superfood Yogurt Bark is a refreshing and healthy summer treat made with creamy vegan yogurt sweetened with maple syrup and enriched with a vibrant superfood blend. Topped with nutrient-dense goji berries, white mulberries, puffed millet, coconut chips, and fresh raspberries, it offers a deliciously crunchy and fruity snack that’s naturally vegan, oil-free, gluten-free, and refined sugar-free. Perfect for a quick and wholesome dessert or snack, it requires minimal prep and only freezing time to set.

Ingredients

Scale

Base

  • 2 cups vegan yogurt of choice (I used Kite Hill)
  • 1/8 cup maple syrup
  • 1 tbsp Smoov Blush Blend (Use code “THEALLNATURALVEGAN” for 15% off)

Toppings

  • Goji berries, to taste
  • White mulberries, to taste
  • Puffed millet, to taste
  • Coconut chips, to taste
  • Fresh raspberries, to taste

Instructions

  1. Mix the yogurt and maple syrup: In a mixing bowl, combine 2 cups of vegan yogurt and 1/8 cup of maple syrup. Stir thoroughly until the mixture is smooth and evenly blended.
  2. Add the superfood blend: Incorporate 1 tablespoon of Smoov Blush Blend into the yogurt mixture. Mix well until there are no lumps and the blend is uniformly distributed.
  3. Prepare the freezing surface: Line a sheet pan or a flat cutting board with parchment paper. Ensure the surface fits comfortably inside your freezer.
  4. Spread the yogurt mixture: Pour the yogurt mixture onto the parchment paper. Using the back of a spoon, spread it evenly to about 1/4 inch thickness.
  5. Add the toppings: Sprinkle goji berries, white mulberries, puffed millet, coconut chips, and fresh raspberries evenly over the yogurt layer.
  6. Freeze the bark: Place the sheet pan or board in the freezer and allow it to freeze solid for at least 2 hours.
  7. Serve: Once fully frozen, lift the bark from the parchment paper and break it into bite-sized pieces. Enjoy immediately or store frozen for later snacking.
