Seasoning:
- 3 Tbsp olive oil
- 2 Tbsp honey
- 4 large cloves garlic, minced
- 2 tsp dried thyme
- Salt + pepper, to taste
- 1/2 a lemon, juice
- 1 Tbsp fresh parsley, chopped (to garnish)
Instructions
- Preheat the oven: Preheat oven to 400F (205C).
- Prepare the carrots: Peel and chop carrots into 1.5 to 2-inch pieces, cutting on a diagonal.
- Season the carrots: In a baking dish, combine carrots, olive oil, honey, garlic, thyme, salt, and pepper. Toss to coat.
- Roast the carrots: Roast in the oven for 30-45 minutes, tossing halfway through.
- Finish and serve: Drizzle with lemon juice, parsley, and extra honey. Adjust seasoning if needed. Serve hot.

- You can use any type of honey, but runnier textures work best for coating.
