Instructions

  2. Cook Ground Beef: In a skillet over medium heat, cook 1 pound of lean ground beef with 1 teaspoon salt, ½ teaspoon black pepper, 1 teaspoon onion powder, and ¼ teaspoon cayenne pepper until browned and thoroughly cooked, crumbling as it cooks. Drain any excess grease.
  3. Arrange Tortillas: Place 8 of the 10 flour tortillas on the buttered baking sheet—two at one end and six around the edges—forming a rough rectangle at the center.
  4. Layer Meat and Cheese: Spread the cooked ground beef evenly down the middle two tortillas arranged on the sheet. Sprinkle 1 cup of shredded mozzarella cheese evenly over the beef.
  5. Sauté Vegetables: Using the same skillet, warm the diced red onion and bell peppers over medium heat for about 4 minutes until softened. Then, spread this mixture evenly on top of the mozzarella cheese layer.
  6. Top with Cheddar Cheese: Sprinkle 1 cup of shredded cheddar cheese evenly over the onion and pepper layer.
  7. Butter Remaining Tortillas: Brush the remaining two tortillas with the melted salted butter on one side. Place these buttered tortillas over the cheese layer, butter side facing up.
