Description

  • 10 pitted Medjool dates

  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon


Instructions

  1. Prepare the Pistachios: Place ¼ cup of the raw pistachios in a food processor fitted with a metal blade. Pulse and process until the pistachios resemble a coarse sand texture. Transfer this mixture to a small bowl and set aside for later use.
  2. Grind Nuts: Add the cashews and the remaining ¼ cup pistachios to the food processor. Process them until they are finely ground, forming a consistent nut meal.
  3. Add Remaining Ingredients: Into the finely ground nuts, add the pitted Medjool dates, pumpkin purée, sea salt, pumpkin pie spice, cinnamon, and vanilla extract. Process continuously until the mixture is well combined and smooth, resembling a sticky dough. At this stage, taste and adjust the spices if desired for a stronger or milder flavor.
  4. Form Balls: Using a spoon or your hands, scoop the mixture and roll it into 9 equal-sized balls approximately golf-ball sized.
  5. Coat with Pistachios: Roll each of the formed balls in the reserved coarse pistachio mixture to add extra texture and a nutty coating.
  6. Serve or Store: Serve the energy balls immediately or store them in an airtight container in the fridge or freezer for later snacking. They make a perfect grab-and-go healthy treat.
