  • 1 teaspoon butter
  • ⅔ cup shredded mozzarella cheese (divided)

  • 6 slices pepperoni (sliced in half)

Instructions

  1. Preheat the skillet: Heat a large non-stick skillet over medium-high heat to prepare for cooking the quesadilla.
  2. Butter the tortillas: Lightly butter one side of each tortilla using about ½ teaspoon of butter per tortilla. This helps achieve a golden, crispy exterior.
  3. Assemble the quesadilla: Place one tortilla, butter side down, in the hot skillet. Evenly sprinkle ⅓ cup of mozzarella cheese on top, followed by 2 tablespoons of pizza sauce, the halved pepperoni slices, and the thinly sliced basil leaves if using. Add the remaining mozzarella cheese on top, then cover everything with the second tortilla, butter side up.
  4. Cook the first side: Let the quesadilla cook for 2 to 3 minutes until the cheese starts to melt and the bottom tortilla becomes lightly browned and crisp.
  5. Flip and cook the other side: Carefully flip the quesadilla to cook the other side. Continue cooking until the cheese is fully melted and the second tortilla is also crisp around the edges.
  6. Serve: Use a spatula to transfer the quesadilla to a cutting board. While still hot, cut it into wedges and serve immediately for the best texture and flavor.
