Romesco Sauce:
- 1 1/2 cups Romesco sauce (prepared)
For the Cod:
- 3/4 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1 cup Panko breadcrumbs
- 1/2 cup Parmesan cheese, grated
- 3/4 cup olive oil
- 4 (6 oz) cod fillets
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped, for garnish
Instructions
- Do Ahead: Prepare the Romesco sauce as per recipe.
- Prepare the Cod: Set up a dredging station with three pans. Coat the cod fillets with flour, eggs, and a mixture of Panko, Parmesan, and salt. Cook in hot oil until golden brown on both sides.
- Heat the Romesco sauce and spoon over the cooked cod fillets.
