Description

Ingredients

Romesco Sauce:

  • 1 1/2 cups Romesco sauce (prepared)

For the Cod:

  • 3/4 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 cup Panko breadcrumbs
  • 1/2 cup Parmesan cheese, grated
  • 3/4 cup olive oil
  • 4 (6 oz) cod fillets
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Do Ahead: Prepare the Romesco sauce as per recipe.
  2. Prepare the Cod: Set up a dredging station with three pans. Coat the cod fillets with flour, eggs, and a mixture of Panko, Parmesan, and salt. Cook in hot oil until golden brown on both sides.
  3. Heat the Romesco sauce and spoon over the cooked cod fillets.
