Simple Syrup:
- 2 cups sugar
- 1 cup water
Mint Tea:
- 6 cups water
- 4 family-sized iced tea bags
- 2 cups fresh mint leaves
Peach Nectar:
- 2 1/2 pounds ripe peaches
- 1/4 cup lemon juice
- 3 cans (12-ounces each) ginger ale, chilled
- 2 liters club soda, chilled
Instructions
- Prepare the Simple Syrup: Combine sugar and 1 cup of water in a saucepan. Bring to a boil, then simmer until sugar dissolves. Set aside to cool.
- Prepare the Mint Tea: Boil 6 cups water, then steep tea bags and mint leaves. Cool, strain, and pour into a large container.
- Prepare the Peach Nectar: Blanch and peel peaches, then blend with lemon juice. Strain and add to the container with mint tea. Stir in 1 cup of simple syrup.
- Chill and Serve: Refrigerate the punch for 4-12 hours. Just before serving, mix in ginger ale and 1 liter of club soda. Adjust sweetness to taste.
Notes
- Choose ripe, sweet peaches for the best flavor.
- You can prepare the punch ahead of time and add the fizzy ingredients just before serving.
- If peaches are out of season, you can use store-bought peach nectar as a substitute.
- Leftover club soda can be used to refresh the punch the next day.
