Sweet Potato Wedges:

  • 2 lbs medium sweet potatoes

Seasoning:

  • 2 Tbsp grass-fed butter, melted
  • 1/4 cup maple syrup
  • 1/4 cup chopped pecans
  • Salt & pepper, to taste

Instructions

  1. Preheat the Oven: Preheat the oven to 450 degrees Fahrenheit. Line a baking sheet with aluminum foil.
  2. Prepare Sweet Potatoes: Cut the sweet potatoes into quarters to form wedges and arrange them on the baking sheet. Drizzle the melted butter over the sweet potatoes and season with salt and pepper. Toss to coat evenly.
  3. Roast: Roast the sweet potatoes in the oven for 20 minutes.
  4. Add Maple Syrup and Pecans: Remove the sweet potatoes from the oven. Drizzle with maple syrup and sprinkle with pecan pieces. Return to the oven and roast for an additional 10-15 minutes until browned and tender.
