Description

These refreshing Mango Popsicles are a delightful treat for hot summer days. Made with a creamy coconut yogurt base, sweet mango, and a hint of lime, they are a healthy and flavorful snack for all ages.


Ingredients

Frozen Mango Cubes:

1 1/2 cups

Coconut Yogurt:

1/2 cup

Agave (or sweetener of choice):

2 tablespoons

Lime Juice:

2 tablespoons

Water:

3/4 cup

Optional:

1/4 teaspoon turmeric
1/4 teaspoon ground cardamom


Instructions

  1. Blend Ingredients: Blend all of the ingredients in a high-speed blender until smooth. The consistency will be a thick liquid, slightly thinner than a smoothie.
  2. Fill Molds: Carefully pour or spoon the liquid into the popsicle molds. Place the tops on.
  3. Freeze: Place the popsicle molds in the freezer and freeze for at least 8 hours or overnight.
  4. Serve: When the popsicles are fully frozen, they are ready to serve and enjoy. To serve, some popsicle forms may require a short dethawing time. Alternatively, run the mold over warm water until the popsicle separates.

Notes

  • If using open-top popsicle molds, freeze for 1 to 2 hours before adding sticks.
  • Freezing time varies; for best results, freeze overnight.
  • To keep these WFPB, use maple syrup as the sweetener.
