Cookie Dough:
- 1 1/2 cups sweet cream butter (3 sticks)
- 1 1/2 cups packed light brown sugar
- 1 cup white sugar
- 1 large egg + 1 egg yolk
- 1 Tbsp. vanilla extract
- 1 tsp. baking soda dissolved in 2 Tbsp. hot water
Dry Ingredients:
- 2 cups all-purpose flour
- 1 cup cake or pastry flour
- 1 tsp. baking powder
- 1 tsp. cinnamon
- 1 1/2 tsp. salt
Additional Mix-Ins:
- 1 cup white chocolate chips
- 1 cup milk chocolate chips
- 1 cup chopped pecans (optional)
Instructions
- Melt Butter: Melt butter in the microwave in 20-second increments until fully melted.
- Prepare Dough: Allow the melted butter to cool for 15-20 minutes. Add sugars to the butter, beat, then add eggs, vanilla, and the baking soda mixture.
- Combine Dry Ingredients: In a separate bowl, mix flours, baking powder, cinnamon, and salt. Slowly add this to the wet ingredients.
- Stir in Mix-Ins: Fold in white and milk chocolate chips, and nuts if using.
- Chill Dough: Cover the dough and chill for 3-24 hours.
- Bake Cookies: Preheat oven, drop dough onto baking sheets, and bake until golden.
- Cool and Store: Allow cookies to cool before transferring to a wire rack and storing in an airtight container.
