Description

  • 1/2 onion, diced
  • 1 lb. ground beef
  • 15 oz diced tomatoes, canned
  • 1 1/2 cups mixed veggies (peas and carrots)
  • 3/4 cup white rice
  • 2 cups beef broth

  • 1 tsp garlic salt
  • 1/2 tsp dried basil
  • 1/2 tsp pepper
  • 1 1/2 cups mozzarella cheese

Instructions

  1. Brown the beef and onion: In a large skillet over medium heat, cook the ground beef and diced onion together until the meat is no longer pink. Drain any excess fat thoroughly to avoid greasiness.
  2. Add remaining ingredients: Return the skillet to the stovetop and add the canned diced tomatoes, mixed peas and carrots, white rice, beef broth, oregano, garlic salt, dried basil, and pepper. Stir everything well to combine.
  3. Simmer the mixture: Bring the mixture to a gentle boil, then reduce the heat to low and cover the skillet with a lid. Let it simmer for about 17 minutes or until the rice is tender and has absorbed most of the liquid.
  4. Finish with cheese: Fluff the cooked rice gently with a fork. Sprinkle the shredded mozzarella cheese evenly over the top. Cover the skillet again and let it sit for about 3 minutes to allow the cheese to melt completely.
