Description

Hot Honey Chicken is a delicious dish featuring crispy chicken breasts coated in cornflakes, drizzled with a spicy-sweet honey sauce. This recipe provides a perfect balance of savory and sweet flavors, with a satisfying crunch.

Ingredients

Units Scale

Chicken:

  • 4 chicken breasts (about 700g/1.5lbs altogether)
  • 90 g (3/4 cup) plain (all-purpose) flour
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 eggs whisked
  • 150 g (5 cups) cornflakes crushed (cup measurement is before crushing)
  • 3 tbsp neutral oil, such as avocado or rapeseed

Hot honey sauce:

  • 180 ml (1/2 cup) runny honey
  • 3 tbsp hot pepper sauce
  • 2 tbsp unsalted butter
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste for spiciness)
  • 1/2 tsp garlic powder

To Serve (optional):

  • Maldon salt flakes
  • pickled gherkins

Instructions

  1. Preheat the oven: Preheat the oven to 200C/400F (fan) and line a large baking sheet with parchment paper.
  2. Prepare the chicken: Slice the chicken breasts in half horizontally to create 8 thin chicken steaks.
  3. Coat the chicken: Dredge the chicken pieces in a mixture of flour, salt, pepper, garlic powder, paprika, and thyme. Then dip them in whisked eggs and coat with crushed cornflakes.
  4. Bake the chicken: Place the coated chicken on the baking sheet and bake for 20-25 minutes until golden and cooked through.
  5. Make the hot honey sauce: In a saucepan, combine honey, hot pepper sauce, butter, smoked paprika, cayenne pepper, and garlic powder. Heat until the butter melts.
  6. Serve: Drizzle the cooked chicken with hot honey sauce, sprinkle with Maldon salt flakes, and serve with pickled gherkins.

Notes

  • You can prepare the chicken and sauce ahead of time and reheat when ready to serve.
  • Leftover chicken can be refrigerated for up to 2 days and reheated in the oven or air fryer.
  • Freeze cooked chicken for longer storage and reheat before serving. The sauce is not recommended for freezing.
