Ingredients

Units Scale

Chicken

  • 2 lbs Boneless skinless chicken thighs or breasts

Marinade

  • 1/2 cup Olive Oil
  • Juice of 1 large lemon
  • 6 Garlic Cloves, minced
  • 3 tbs Honey
  • 2 tsp Paprika
  • 2 tsp Garlic Powder
  • 1 tsp Dried Oregano
  • 1/2 tsp Red Pepper Flakes
  • 1/2 cup Freshly Grated Parmesan Cheese
  • Salt and Pepper to taste

Buttery Topping

  • 4 tbs Butter, melted
  • 4 Garlic Cloves, minced
  • 2 tbs Honey
  • 1/4 cup Freshly Grated Parmesan Cheese
  • 1 tsp Dried Parsley Flakes

Instructions

  1. Prepare the Chicken and Marinade: Trim excess fat from the chicken thighs or breasts and place the pieces in a mixing bowl or large resealable bag. Add olive oil, lemon juice, minced garlic, honey, paprika, garlic powder, dried oregano, red pepper flakes, freshly grated parmesan cheese, salt, and pepper to the chicken. Mix thoroughly to ensure all pieces are well-coated. Refrigerate for at least 1 hour; for best flavor, marinate up to 24 hours.
  2. Preheat Air Fryer and Skewer Chicken: Preheat your air fryer to 400°F (200°C). Soak wooden skewers in water to prevent burning, then thread the marinated chicken pieces onto the skewers evenly.
  3. Cook the Chicken: Place the skewers in the air fryer basket. Air fry for 12 minutes, then carefully flip the skewers over and continue cooking for an additional 5-7 minutes. Use a meat thermometer to ensure the internal temperature of the chicken reaches 165°F (74°C) for safe consumption.
  4. Prepare the Buttery Parmesan Topping: While the chicken cooks, mix together the melted butter, minced garlic, honey, grated parmesan cheese, and dried parsley flakes in a small bowl until well combined.
  5. Finish and Serve: When the chicken skewers are fully cooked, remove them from the air fryer and brush the buttery parmesan topping generously over each piece. Serve hot and enjoy!

Notes

  • To cook using an oven, preheat to 375°F (190°C). Place marinated skewers on a parchment-lined baking sheet. Bake for 15 minutes, then flip and bake for another 10 minutes, checking for an internal temperature of 165°F (74°C).
  • For juicier chicken, marinate for the full 24 hours if time allows.
  • Wooden skewers must be soaked in water for at least 30 minutes prior to prevent burning in the air fryer or oven.
  • Adjust red pepper flakes quantity for desired spiciness.
  • Serve with a side of fresh vegetables or rice for a complete meal.
