Butter Mixture:

  • 2 tablespoons unsalted butter
  • 2 tablespoons avocado oil or extra light olive oil
  • 1 clove garlic, grated or finely minced
  • 1 lemon, zested
  • 1/2 lemon, juiced (about 2 tablespoons)
  • 1 teaspoon Italian seasoning
  • 2 pinches kosher salt
  • 2 pinches freshly ground black pepper
  • 1 pinch crushed red pepper flakes (optional)

Additional Ingredients:

  • 4 medium zucchinis, washed, stem trimmed, and cut horizontally
  • 1/3 cup freshly grated Parmesan cheese
  • 2 tablespoons small basil leaves

Instructions

  1. Melt butter with olive oil in a small saucepan. Add grated garlic, lemon zest, lemon juice, Italian seasoning, salt, pepper, and red pepper flakes. Stir and set aside.
  2. Score zucchini flesh and brush with butter mixture. Grill cut-side down for 8-10 minutes.
  3. Turn zucchinis, brush with remaining butter mixture, and sprinkle with Parmesan. Grill for 1-2 more minutes until cheese melts.
  4. Serve immediately, topped with fresh basil leaves.
