Description

French Onion Soup Bites are delightful appetizer-sized treats featuring caramelized onions simmered in rich beef stock with aromatic spices, nestled in crispy phyllo cups, and topped with melted Gruyere and Parmesan cheeses. Onion Mixture

  • 1 large onion, thinly sliced
  • 2 cups beef stock
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon crushed red pepper
  • 1 tablespoon Worcestershire sauce
  • Olive oil, a drizzle

Cheese and Cups

  • 2 deli slices Gruyere or other sharp white cheese (about 1 ounce), very thinly sliced
  • 2 tablespoons grated Parmesan cheese
  • 1 package frozen phyllo cups (about 15 cups)
  • Fresh thyme leaves (optional, for garnish)


Instructions

  1. Prepare the onion mixture: In a small skillet, heat a drizzle of olive oil over medium heat. Add the thinly sliced onion, beef stock, onion powder, garlic powder, salt, crushed red pepper, and Worcestershire sauce. Cook the mixture, stirring occasionally, until the onions are very soft and most of the liquid has evaporated, about 45 minutes. Using a nonstick skillet is recommended for best results.
  2. Prep the cheese: Cut the deli slices of Gruyere cheese into 8 pieces each, creating small squares large enough to place two on each phyllo cup.
  3. Assemble the phyllo cups: Preheat the oven to 375°F. Place the frozen phyllo cups on a baking sheet. Put a small amount of grated Parmesan cheese into each cup, followed by about a teaspoon of the cooked onion mixture, distributing it evenly to use it all up. Top each filled cup with two small pieces of the Gruyere or sharp white cheese.
  4. Bake the bites: Bake the filled phyllo cups in the preheated oven for 20 minutes or until the cheese is bubbly and melted.
  5. Garnish and serve: Remove from oven, garnish with fresh thyme leaves if desired, and serve hot. These can also be served at room temperature and are ideal for making ahead for potluck events.

  • Make this recipe vegetarian by substituting vegetable stock and using vegan Worcestershire sauce; the flavor remains rich and delicious.
