For the Chicken:
- 1 quart of buttermilk
- 2 lbs chicken (drumsticks and wings)
For the Coating:
- 1 cup self-rising flour
- 1 1/2 tsp poultry seasoning
- 1/8 tsp ground black pepper
- 1 tsp salt
- 1 tsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
For Baking:
- Oil spray (canola oil spray)
Instructions
- Clean the Chicken: Place chicken in a medium bowl.
- Marinate: Pour buttermilk over chicken, ensuring it’s fully covered. Refrigerate for at least 4 hours.
- Prepare Chicken: Drain buttermilk, do not rinse chicken.
- Preheat Oven: Set to 400°F.
- Season: Sprinkle poultry seasoning over chicken.
- Coat: In a bag, mix flour and seasonings. Add chicken and coat.
- Prepare Tray: Line baking tray, spray with oil. Place chicken on tray.
- Bake: Bake for 40 minutes, turning periodically. Broil for the last 5 minutes for extra crispiness.
