Vegetable Mixture:

  • 1/4 tsp cayenne pepper
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 2 bay leaves

Other Ingredients:

  • 2 cups long-grain white rice or basmati rice
  • 4 cups low-sodium chicken broth
  • 1/2 cup chopped green onion
  • 1/4 cup fresh chopped parsley

Instructions

  1. Cook the Meat: In a large saucepan over medium heat, brown ground beef, sausage, and liver with salt and pepper.
  2. Prepare the Base: Stir in flour, then add onion, celery, bell pepper, garlic, Cajun seasoning, cayenne, oregano, thyme, and bay leaves.
  3. Add Rice and Broth: Mix in rice and chicken broth. Simmer covered for 20 minutes, then let rest off heat.
  4. Finish and Serve: Fluff the rice, garnish with green onion and parsley, and serve hot.
