  • 2 stocks romaine lettuce, chopped
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 2 stocks green onions, diced
  • 1 handful cilantro, chopped (about 1/4 cup)
  • 1/2 cup shredded carrots (about 6 baby carrots)
  • 1/4 jalapeno, finely chopped and deseeded
  • juice from 1/2 a lime

Yogurt Dressing

  • 1/2 cup Greek yogurt, plain
  • 1/4 teaspoon salt and pepper
  • 1 1/2 tablespoon mayonnaise
  • juice from 1/2 a lime
  • 1/2 teaspoon garlic powder

Instructions

  1. Cook the Chicken: Cook the breaded chicken tenders in the oven or air fryer. Dice and chop the romaine lettuce, red onion, avocado, green onions, cilantro, shredded carrots, and jalapeno. Combine in a large bowl.
  2. Make the Hot Honey Sauce: Mix honey, olive oil, ground ginger, garlic powder, cayenne powder, chili powder, and salt in a bowl. Dice the chicken and coat it in the sauce.
  3. Prepare the Yogurt Dressing: Mix Greek yogurt, salt, pepper, mayonnaise, lime juice, and garlic powder in a separate bowl.
  4. Combine Ingredients: Mix the salad with the chicken and yogurt dressing. Add lime juice for extra flavor.
