  • 4 cups low-sodium chicken broth

For the Roux:

  • 1/2 cup butter
  • 1/2 cup all-purpose flour

For Finishing the Soup:

  • 1 cup freshly grated parmesan cheese
  • 1 1/2 cups half and half (or whole milk)
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh basil

Instructions

  1. Sauté Vegetables: In a large soup pot over medium-high heat, sauté carrots, onions, and celery in olive oil.
  2. Cook Soup: Add tomatoes, tomato paste, chicken broth, oregano, and basil. Simmer until vegetables are tender. Blend until smooth.
  3. Prepare Roux: In a separate pot, melt butter, stir in flour to make a golden brown roux. Slowly add soup to roux, stirring to combine.
  4. Finish Soup: Stir in parmesan, half and half, salt, pepper, and basil. Adjust seasoning to taste. Cook until warmed through.
