Soup:
- 3 lbs sweet onions, halved and thinly sliced
- 6 tablespoons unsalted butter
- 3 tablespoons all-purpose, unbleached flour
- 1 cup red wine
- 8 cups beef stock
- 2 bay leaves
- 4 sprigs fresh thyme
- Salt and pepper to taste
For Serving:
- 1 baguette, thinly sliced
- 1 1/2 cups Gruyère cheese, grated
Instructions
- Caramelize Onions: In a large pot, melt butter over medium heat. Add the onions and cook until soft and caramelized, about 30 minutes.
- Add Flavors: Stir in flour and cook for 1 minute. Pour in wine, scraping up any browned bits. Simmer until wine reduces.
- Cook Soup: Add beef stock, thyme, and bay leaves. Boil, then simmer for 30 minutes. Remove bay leaves and thyme. Season with salt and pepper.
- Prepare Toppings: Preheat broiler. Brush baguette slices with oil and broil until toasted.
- Serve: Ladle soup into bowls, top with baguette slices and cheese. Broil until cheese is golden. Garnish with thyme and serve.
