Description

Ingredients

  • 1/2 cup corn starch
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 2 cups buttermilk
  • 1 head cauliflower, cut into florets

Buffalo Sauce

  • 4 oz unsalted butter (1 stick), melted
  • 1 1/2 Tbsp light brown sugar
  • 1 tsp garlic salt
  • 1 tsp sweet paprika
  • 2 tsp white vinegar
  • 1/2 cup Franks RedHot Sauce
  • 2 Tbsp sriracha sauce
  • Salt and pepper to taste

Blue Cheese Dip

  • 1/2 cup blue cheese, crumbled
  • 1/3 cup creme fraiche
  • 1/3 cup mayonnaise
  • 1/4 cup buttermilk
  • Salt and pepper to taste

Instructions

  1. Battered Cauliflower Preheat oven to 450 degrees and line a baking sheet with parchment paper. Whisk together the corn starch, flour, baking powder, salt, and buttermilk until smooth in a medium bowl. Toss cauliflower florets in the batter, shake off excess, and roast for 20-25 minutes until browned.
  2. Buffalo Sauce Whisk together all the Buffalo sauce ingredients and set aside.
  3. Blue Cheese Dip Whisk together all the Blue Cheese Dip ingredients and set aside.
  4. Buffalo Cauliflower Toss roasted cauliflower in Buffalo sauce, bake for 5 more minutes. Serve with blue cheese dip and extra Buffalo sauce.
