Ingredients

Bowtie Pasta:

  • 1 lb package bow tie pasta, about 3/4 of the package

Sausage Mixture:

  • 1 lb sweet Italian sausage
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped onion
  • 1-2 cloves garlic, minced
  • 1 lb fresh mushrooms, sliced
  • 3 cans (14.5 oz each) Italian style diced tomatoes, drained
  • 1 1/2 cups heavy cream
  • 1/2 cup fresh grated Parmesan cheese
  • Salt to taste
  • 1/4 cup fresh basil, chopped
  • Additional Parmesan or Romano cheese, for serving

Instructions

  1. Cook the Pasta: Boil the bowtie pasta according to package instructions, drain, toss with olive oil, and set aside.
  2. Cook the Sausage: In a pan over medium heat, cook the sweet Italian sausage, breaking it into bite-size chunks. Remove cooked sausage and drain on paper towels.
  3. Sauté Vegetables: In the same pan, sauté onion, mushrooms, and red pepper flakes until tender. Add garlic towards the end.
  4. Combine Ingredients: Stir in drained tomatoes, cream, salt, and cooked sausage. Simmer until slightly thickened.
  5. Add Cheese and Finish: Mix in Parmesan cheese, then combine the sauce with the cooked pasta. Serve with fresh basil and more cheese.

Notes

  • I use a mixture of sweet and spicy Italian sausage for added flavor.
  • You can lighten the dish by using half-and-half instead of heavy cream.
  • Fresh tomatoes can be used when in season for a more vibrant flavor.
  • This recipe can also be adapted for the slow cooker for added convenience.
