Bowtie Pasta:
- 1 lb package bow tie pasta, about 3/4 of the package
Sausage Mixture:
- 1 lb sweet Italian sausage
- 1/2 teaspoon red pepper flakes
- 1 cup chopped onion
- 1-2 cloves garlic, minced
- 1 lb fresh mushrooms, sliced
- 3 cans (14.5 oz each) Italian style diced tomatoes, drained
- 1 1/2 cups heavy cream
- 1/2 cup fresh grated Parmesan cheese
- Salt to taste
- 1/4 cup fresh basil, chopped
- Additional Parmesan or Romano cheese, for serving
Instructions
- Cook the Pasta: Boil the bowtie pasta according to package instructions, drain, toss with olive oil, and set aside.
- Cook the Sausage: In a pan over medium heat, cook the sweet Italian sausage, breaking it into bite-size chunks. Remove cooked sausage and drain on paper towels.
- Sauté Vegetables: In the same pan, sauté onion, mushrooms, and red pepper flakes until tender. Add garlic towards the end.
- Combine Ingredients: Stir in drained tomatoes, cream, salt, and cooked sausage. Simmer until slightly thickened.
- Add Cheese and Finish: Mix in Parmesan cheese, then combine the sauce with the cooked pasta. Serve with fresh basil and more cheese.
Notes
- I use a mixture of sweet and spicy Italian sausage for added flavor.
- You can lighten the dish by using half-and-half instead of heavy cream.
- Fresh tomatoes can be used when in season for a more vibrant flavor.
- This recipe can also be adapted for the slow cooker for added convenience.
