Description

These Baked Zucchini Fries are a healthier alternative to traditional fries, featuring crispy Parmesan-coated zucchini slices served with a zesty Lemon Parsley Aioli. Perfect for a tasty snack or a side dish!

Zucchini Fries

  • 2 medium zucchini
  • 1 egg
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian spice

Lemon Parsley Aioli

  • 1/2 cup mayonnaise
  • 1 lemon juiced
  • 1 garlic clove minced
  • 1 tbsp finely chopped parsley
  • salt and pepper

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit and line two baking trays with parchment paper.
  2. Slice the zucchini into quarters. Beat the egg. Combine Parmesan and spices. Dip zucchini in egg, coat with Parmesan, and bake.

  3. To make the Lemon Parsley Aioli, combine all ingredients in a bowl and stir.
