Scale
Main Ingredients
- 12 oz cooked turkey breast, chopped fine
- 3 medium potatoes, peeled, cooked and mashed
- 3/4 cup chicken broth
- 2 teaspoons olive oil
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 1/2 cup parsley, chopped
- Salt and fresh ground pepper, to taste
- 1/2 cup seasoned whole wheat bread crumbs
- 1 egg, whisked
- Olive oil spray, for baking
- Leftover turkey gravy (optional, for serving)
Instructions
- Mash Potatoes: In a large bowl, combine the mashed potatoes with 1/4 cup chicken broth, salt, and pepper. Mix thoroughly and set aside to incorporate flavors.
- Sauté Aromatics: In a skillet over low heat, sauté the garlic and chopped onions in olive oil until softened, about 2-3 minutes. Add chopped parsley, salt, and pepper, continuing to cook gently until fragrant and tender.
- Mix Turkey and Broth: Add the chopped turkey breast and the remaining chicken broth to the skillet. Stir well to combine and then turn off the heat.
- Combine Turkey Mixture with Potatoes: Add the turkey mixture to the bowl with mashed potatoes. Using clean hands, mix all ingredients thoroughly to create a uniform mixture. Adjust salt seasoning as needed.
- Preheat Oven: Preheat your oven to 450°F (232°C) to get ready for baking the croquettes.
- Form Croquettes: Using a 1/4 cup measure, scoop portions of the mixture and shape each into croquettes. Place formed croquettes on waxed paper to prevent sticking.
- Coat Croquettes: Dip each croquette first in the whisked egg mixture, then coat evenly with seasoned whole wheat bread crumbs.
- Arrange and Spray: Place the coated croquettes on a parchment-lined baking sheet for easy cleanup. Spray each croquette generously with olive oil spray, approximately 1 tablespoon total.
- Bake: Bake in the preheated oven for about 15 minutes, or until the croquettes are golden brown on the outside and heated through.
- Serve: Optionally serve the baked turkey croquettes with leftover turkey gravy for added moisture and flavor.
Notes
- These croquettes are a perfect way to use leftover turkey and reduce food waste.
- If you don’t have seasoned breadcrumbs, you can season plain breadcrumbs with dried herbs like thyme, oregano, and a pinch of salt.
- Make sure the mashed potatoes are well cooled before mixing to avoid a sticky mixture.
- Olive oil spray helps to achieve a crispy texture without deep frying.
- You can prepare the croquettes ahead of time and refrigerate before baking for convenience.
- Leftover turkey gravy adds richness and moisture but is optional based on preference.
