  • 1 cup red wine plus 1/4 cup

  • 4 beef short ribs
  • 1 large onion, chopped

  • 2 28-ounce cans whole peeled tomatoes
  • 1 6-ounce can tomato paste
  • 1 28-ounce can tomato sauce
  • 2 cups beef broth
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1/4 cup chopped fresh Italian parsley
  • 1 pound Italian sausage, cooked and drained

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Prepare the meat: In a roasting pan, combine 1 cup red wine, olive oil, beef short ribs, onion, garlic, salt, and pepper. Roast for 1 hour and 30 minutes.
  3. Simmer the sauce: Transfer the roasted mixture to a stockpot over medium-low heat. Add remaining red wine and simmer for 30 minutes.
  4. Add remaining ingredients: Stir in tomatoes, tomato paste, tomato sauce, beef broth, basil, oregano, and parsley. Simmer uncovered for 4-6 hours.
  5. Finish the sauce: Remove ribs, stir in cooked sausage, and simmer for an additional hour.
  6. Serve: Serve the gravy over cooked pasta.
