Instructions
- Prepare the meatloaf mixture: In a medium bowl, combine the ground turkey, quick rolled oats, grated zucchini (make sure to squeeze out excess moisture), minced onion, 1/4 cup ketchup, beaten egg, kosher salt, and black pepper. Mix well using a fork until all ingredients are evenly incorporated.
- Shape the mini loaves: Divide the mixture into 4 equal portions. Shape each portion into mini loaves, ensuring they are compact and uniform in size for even cooking.
- Air fry the mini loaves: Place the mini loaves in the air fryer basket in a single layer, making sure they have space around them to cook evenly. Set the air fryer to 350°F and cook for 15 minutes.
- Flip and glaze: After 15 minutes, carefully flip each mini loaf over. Brush the tops with the remaining 2 tablespoons of ketchup to create a flavorful glaze.
- Finish cooking: Return the tray to the air fryer and cook for an additional 5 minutes, or until the centers of the mini loaves are cooked through and the internal temperature reaches 165°F.
